Creamy Cinnamon Atole

Ingredientes

  • 4 cups milk
  • 1/4 cup cornstarch
  • 1 taza de agua
  • 2 cinnamon sticks, broken in half
  • 1/4 cup piloncillo, or dark brown sugar
  • 1 1/2 tsp Mexican vanilla extract, or regular vanilla extract
  • Ground cinnamon, as garnish

Atole is a warm and thick corn-based traditional beverage from Mexico that is perfect to enjoy during the winter and around the holidays. Over time, atole has evolved to different versions of flavors and creaminess by adding milk instead of just water, chocolate, and even fruit.
 

The flavors all simmer together in one pot and become a creamy cinnamon-vanilla comforting drink. It’s easily made with just a few ingredients such as cornstarch, piloncillo, cinnamon, milk, and vanilla. Serve immediately while still hot and enjoy with your favorite pan dulce.

How to Make Creamy Cinnamon Atole

  1. 1. In a bowl, combine 1 cup of milk and cornstarch. Using a fork or a whisk, mix well until all the lumps have disappeared. Set aside.
  2. 2. In a saucepan over medium heat, simmer water and cinnamon sticks for 3-5 minutes.
  3. 3. Add remaining 3 cups of milk to the cinnamon water and stir until milk is warmed through. Then add the cornstarch mixture and mix everything together.
  4. 4. Add the piloncillo and vanilla and keep stirring to prevent the milk from sticking to the bottom of the pan. (important step!)
  5. 5. Increase heat to a simmer and cook until slightly thickened, about 5 minutes. Remove cinnamon sticks before serving. Serve while hot and garnish with ground cinnamon.

 

Consejo:
• Use regular or plant-based milk. We find that whole milk makes it creamier.
 

Flavored atole: (add to step #3)
• Add 1/4 cup fruit puree, such as pineapple or strawberry, for a fruity atole.
• Add 2-3 oz of Mexican chocolate tablet for a richer hot chocolate atole.
