Ingredients

Savory Longevity Noodles

  • 3 quarts water, to cook noodles
  • 10 oz fresh or dry Chinese noodles
  • 2 Tbsp cooking oil
  • 6 green onions, sliced, white and green parts divided
  • 5 shiitakes or mushroom of choice, sliced
  • 3-4 cups chopped bok choy or vegetables of choice
  • Chili sauce, to taste (optional)

Sauce

  • 1 Tbsp water
  • 1 Tbsp soy sauce
  • 1 Tbsp dark soy sauce (see tip)
  • 2 Tbsp oyster sauce
  • 1/2 tsp toasted sesame oil
  • 1/4 tsp sugar
  • 1/4 tsp white or black pepper

Longevity noodles symbolize long life and are thought to bring good luck and prosperity. In Chinese culture, these savory noodles are eaten during special celebrations such as Lunar New Year, birthdays, and anniversaries. Our simple version of longevity noodles will cook up a comforting dish in less than 30 minutes, making it an easy dish to also enjoy year-round. We used mushrooms and bok choy to complement the aromatic sauce, but you can use whatever veggies you have on hand. We hope you enjoy our recipe that honors the rich and delicious culinary Chinese culture.

How to Make Savory Longevity Noodles

Directions

  1. 1. In a large pot, bring water to a boil and cook noodles according to package directions – do not overcook. Once done, immediately drain noodles and rinse well under cold water. Set aside.
  2. 2. Meanwhile, make the sauce. In a small bowl, combine all sauce ingredients and mix well. Set aside.
  3. 3. Heat oil in a large pan over medium-high heat. Add white part of onions and sauté until fragrant, about 30 seconds.
  4. 4. Add mushrooms and bok choy, and sauté until vegetables are softened, about 2-3 minutes.
  5. 5. Add noodles to the pan, then drizzle in sauce and stir fry everything together until sauce is evenly distributed and absorbed, about 1-2 minutes.
  6. 6. Add green part of onions and mix into noodles before taking it off the heat. Top with extra sesame oil or chili sauce if desired. Enjoy!
  7. Tip: Can substitute 1 Tbsp soy sauce for the dark soy sauce.
